Spicy Chicken Adobo with a little twist
Hey! It’s my 3rd Sunday Cooking
Challenge today and I have to say that I’m excited to feature my favorite
Filipino dish, Adobo. But this time I will cook it with a little
twist by incorporating new ingredients that will definitely inflate the
flavour. Do you want to know what these ingredients are?
You probably have your own secret ingredients in making Adobo but I challenge you to try my recipe, who knows you might like it as much as I do. So without further ado, here are my ingredients:
Chiken, Soy Sauce, Potatoes, Garlic, Black Pepper, Mixed Seasonings, Bay leaves, Green Chili, Ginger, Sukang Pula and Sukang Iloko |
Procedure:
(1) Marinate the chicken with soy sauce and black pepper combined with Sukang Pula and Sukang Iloko for an hour or two
(2) Boil one and a half cup of water in a medium heat pot and slowly place the potatoes together with a slice of peeled ginger
(3) Then, put the marinated chicken in the pot and stir the ingredients
(4) After 10-15 minutes or until the chicken and potatoes soften, pour the seasoning mix with the chopped garlic and 3 bay leaves
(5) Wait for another 10 minutes, then put 1 or 2 green chilli
(6) Add a small amount of black pepper if you prefer a more salty and sour flavour. Then, you’re done.
The aroma and floral feel from the sukang pula (red cane vinegar) and the wine taste from the sukang iloko (sugarcane vinegar) overwhelm in a good way the distinctive flavour of the dish. Plus, the bead of moisture from the ginger definitely spices up the taste of Adobo's juice. Having all these magic ingredients, I’m sure you’ll ask for more cups of rice. Hehehe

I made this recipe for my Filipina girlfriends family's annual adobo contest...and I actually won. Becasue i make bread with it with best rotimaker. This is the most legendary recipe ever. I can't thank you enough. I now have the whole family's respect, and I won an apron.
