Sunday Cooking Challenge II

Pork Curry w/ Carrots & Potatoes

Finally, I have the entire Sunday for my second cooking challenge. Exciting yeah? So for today’s recipe I will be cooking one of the famous South-eastern Asian dishes --- Pork CurryBesides pastas and lasagna, this is actually my first attempt to cook something with a sauce. But after all, this is a Sunday cooking challenge so I better be ready to bite off something more than what I can chew. Aja!

First of all, sorry if I’m not created enough by just literally naming my dish as Pork Curry with Carrots & Potatoes. I just couldn’t think of a better name as I’m writing this post. Anyway, (enough of the drama) here are the ingredients I prepared for today’s cooking! See below picture.

From Top L: Black Pepper, Potatoes, Mix Curry Seasoning, Pork Cuts, Carrot, Garlic, Onion and Coconut Milk.


HOW TO DO IT? The first thing you need to do is boil the pork cuts in a frying pan for about 15 minutes or until the meat softens. While waiting, dissolve the Curry Mix (Mc Cormick) in water and set it aside. Then you can start chopping the other ingredients in any sizes you desire. Since I’m a potato lover, I’m cutting it in to medium slices while the other seasonings are chopped into small pieces.




Once the meat is perfectly tenderized, pour the curry mix in the pan together with the vegetables. After two minutes or so, gently dispense the coconut milk and make sure it evens out the entire cooking pan. Then, stir all the ingredients to check the meat gasped the flavours from all the seasonings. Simmer until the sauce thickens and you can sip a teaspoon of the sauce to check if it has the right amount of taste you look for a curry. If you want it to be spicier and sourly, you can add pinches of black pepper and 2 spoons of soy sauce.


Yes, that’s it! I’m done and I’m overly raring to taste it. Please excuse me friends while I’m about to eat my lunch. :-p
